Bermuda Spiny Lobsters are in season from the 1st September through to March every year. This protects the crustaceans’ population from over fishing. Licensed fishermen are allowed to catch them in specific locations around the island. Most free dive with a ‘tickle-stick’ to lure and catch them. They have hard shells (and look super ugly when they moult these!), and no claws, so all the meat is found in the tail, legs and antennas.
Strangely, no one has found a way to work out how to age them yet.
